Ingredients of Turmeric Egg Curry
- 4 eggs, hard-boiled and peeled
- 2 medium bunches (250 grams each) fresh spinach, blanched and pureed
- 2 teaspoons oil
- 2 teaspoons ginger paste
- 1/4 teaspoon turmeric powder
- 4 teaspoons garlic paste
- 4 medium onions, ground
- 3 medium tomatoes, puréed
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1 teaspoon coriander powder
- salt to taste
How to make Egg Curry
- Heat the oil in a non-stick pan; add the ginger paste and garlic paste and sauté for half a minute. Add the ground onions and sauté till golden brown
- Add the tomato puree and sauté till the oil separates. Add the spinach purée and cook for five to ten minutes, or till the raw flavor disappears
- Add the chili powder, turmeric powder, cumin powder, coriander powder and salt. Mix well and sauté for two to three minutes
- Halve the eggs vertically and add to the gravy. Mix gently and simmer for two minutes
- Serve hot
